CPK Chipotle Pizza
Ingredients
Dough:
- 3 cups all-purpose flour
- 2 1/4 teaspoon (1 packed) instant yeast
- 1/2 tablespoon olive oil
- 1/2 tablespoon olive oil

Pizza Sauce:
Pizza Toppings:
- 1/2 medium onion, thinly sliced
- 1/2 green pepper, thinly sliced
- 1 cup shredded Mexican cheese
Black Bean & Corn Salsa:
- 1 cup black beans, cooked or canned
- 1 cup sweet corn
- 1/2 cup red onion, diced finely
- 1/4 teaspoon cumin
- 1/4 teaspoon red crushed pepper
- 1/2 teaspoon lemon/lime juice
- 1/2 teaspoon salt
Cilantro Lime Crema:
- 3/4 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1/4 cup cilantro, finely diced
- 1 small avocado, blended
- 1 tablespoon honey
- 1/2 teaspoon red crushed pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon red crushed pepper
- 1/2 teaspoon black pepper
Steps
- Preheat the oven to 500°F. If you have a pizza stone, place it inside the oven while it is preheating.
- Make the pizza dough according to this recipe or use frozen pizza dough, whatever you prefer.
- Make the pizza sauce - blend up the chipotle peppers and mix them in with the salsa. Set aside.
- Make the black bean & corn salsa - mix all the ingredients in a large bowl and season to taste. Set aside.
- Make the cilantro lime crema - mix all the ingredients in a small bowl. Fill a small amount in a drizzle bottle or in a plastic bag (snip the corner once ready) to drizzle on the cooked pizza.
Assembling the pizza:
- Spread a generous layer of the pizza sauce on the stretched dough and top with the sliced onions, green peppers, and shredded cheese.
- Place in the oven for 5-10 minutes until the cheese is bubbling and the crust is golden brown.
- Once the pizza is baked, top the entire pizza with the black bean corn salsa and drizzle the cilantro lime crema.
- Enjoy hot!
