CPK Chipotle Pizza

Ingredients

Dough

 - 3 cups all-purpose flour
- 2 1/4 teaspoon (1 packed) instant yeast
- 1/2 tablespoon olive oil
- 3/4 teaspoon salt
- 1 to 1 1/3 cups water
- cornmeal or flour to dust surface

Pizza Sauce: 

- 2 cups salsa
- 2 chipotle peppers in abodo sauce, blended

Pizza Toppings: 

- 1/2 medium onion, thinly sliced
- 1/2 green pepper, thinly sliced
- 1 cup shredded Mexican cheese

Black Bean & Corn Salsa: 

- 1 cup black beans, cooked or canned
- 1 cup sweet corn
- 1/2 cup red onion, diced finely
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon red crushed pepper
- 1/2 teaspoon lemon/lime juice
- 1/2 teaspoon salt

Cilantro Lime Crema:

- 3/4 cup sour cream
- 1/4 cup mayonnaise 
- 2 tablespoons lime juice
- 1/4 cup cilantro, finely diced
- 1 small avocado, blended
- 1 tablespoon honey
- 1/2 teaspoon red crushed pepper
- 1/2 teaspoon black pepper

Steps

  1. Preheat the oven to 500°F. If you have a pizza stone, place it inside the oven while it is preheating. 
  2. Make the pizza dough according to this recipe or use frozen pizza dough, whatever you prefer.
  3. Make the pizza sauce - blend up the chipotle peppers and mix them in with the salsa. Set aside.
  4. Make the black bean & corn salsa - mix all the ingredients in a large bowl and season to taste. Set aside.
  5. Make the cilantro lime crema - mix all the ingredients in a small bowl. Fill a small amount in a drizzle bottle or in a plastic bag (snip the corner once ready) to drizzle on the cooked pizza.

Assembling the pizza:

  1. Spread a generous layer of the pizza sauce on the stretched dough and top with the sliced onions, green peppers, and shredded cheese.
  2. Place in the oven for 5-10 minutes until the cheese is bubbling and the crust is golden brown. 
  3. Once the pizza is baked, top the entire pizza with the black bean corn salsa and drizzle the cilantro lime crema.
  4. Enjoy hot!
