Jambalaya Pasta
Ingredients
- 10 oz. penne pasta
- 2 tablespoons olive oil
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 2 carrots, peeled and chopped
- 1 medium onion
- 1/2 cup green peas
- 1/2 cup asparagus, chopped
- 1/4 cup heavy whipping cream
- 3 chipotle peppers in adobo sauce, blended
- Salt, to taste
Steps
- Boil the pasta according to the box directions and set aside.
- In a large pot, heat up the olive oil. Once hot, sauté the onions until translucent.
- Once the onions are cooked add in the carrots, all the bell peppers and asparagus. Cook for 2-3 minutes. Add the peas.
- After all the vegetables are cooked to your preference, add in the cooked penne.
- Add in the blended chipotle peppers and heavy whipping cream. Season to taste. Add more whipping cream for a more creamy sauce.
- Serve hot, enjoy!
