Jambalaya Pasta

Ingredients


- 10 oz. penne pasta
- 2 tablespoons olive oil
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 2 carrots, peeled and chopped
- 1 medium onion 
- 1/2 cup green peas
- 1/2 cup asparagus, chopped
- 1/4 cup heavy whipping cream
- 3 chipotle peppers in adobo sauce, blended
- Salt, to taste

Steps

  1. Boil the pasta according to the box directions and set aside.
  2. In a large pot, heat up the olive oil. Once hot, sauté the onions until translucent. 
  3. Once the onions are cooked add in the carrots, all the bell peppers and asparagus. Cook for 2-3 minutes. Add the peas. 
  4. After all the vegetables are cooked to your preference, add in the cooked penne.
  5. Add in the blended chipotle peppers and heavy whipping cream. Season to taste. Add more whipping cream for a more creamy sauce.
  6. Serve hot, enjoy!
